Ingredients:
- 1 stalk Broccoli
- 1/2 tbsp Purple onion
- 1/4 Purple cabbage/Cabbage
- 1/4 – 1/2 Carrot
- 8 Garden Tomato
- 3 tbsp Sweet corn
- 1 tbsp Feta Cheese
- 1 tbsp Craisins
- 1/2 tbsp Olive Oil
- 1 tbsp Raspberry Vinaigrette
- 1 tbsp Chia seeds
- 6-8 Almonds
- Optional protein: 1 tin Tuna
- Optional cheese: 1 tbsp of parmesan
Recipe:
- Boil broccoli for 3 minutes and drain.
- Place half the broccoli at the bottom of your container with 1 tbsp of sweet corn.
- Add shredded cabbage, carrot and purple onion.
- Add second layer of broccoli and rest of corn.
- Add olive oil.
- Sprinkle craisins, minced almonds and 1 tbsp of chia seeds.
- Slice garden tomatoes in half and layer on top.
- Add protein and rest of chia seeds.
- Add feta cheese on top.
- Add raspberry vinaigrette.
