Yummy Salads here I come…

Ingredients:

  • 1 stalk Broccoli
  • 1/2 tbsp Purple onion
  • 1/4 Purple cabbage/Cabbage
  • 1/4 – 1/2 Carrot
  • 8 Garden Tomato
  • 3 tbsp Sweet corn
  • 1 tbsp Feta Cheese
  • 1 tbsp Craisins
  • 1/2 tbsp Olive Oil
  • 1 tbsp Raspberry Vinaigrette
  • 1 tbsp Chia seeds
  • 6-8 Almonds
  • Optional protein: 1 tin Tuna
  • Optional cheese: 1 tbsp of parmesan

Recipe:

  1. Boil broccoli for 3 minutes and drain.
  2. Place half the broccoli at the bottom of your container with 1 tbsp of sweet corn.
  3. Add shredded cabbage, carrot and purple onion.
  4. Add second layer of broccoli and rest of corn.
  5. Add olive oil.
  6. Sprinkle craisins, minced almonds and 1 tbsp of chia seeds.
  7. Slice garden tomatoes in half and layer on top.
  8. Add protein and rest of chia seeds.
  9. Add feta cheese on top.
  10. Add raspberry vinaigrette.
